It's with great joy and anticipation that we release our first vintage of cider, From The Coast, a single-estate, single variety ferment. Bottled in single serve bottles, From The Coast is a 6% ABV, completely dry, crisp and aromatic sparkling apple wine. 100% Newton Pippin apples sourced from Briermere Farms.
"From the Coast" is more than just a name; it is a tribute to the spirit of our coastal haven. Nestled in this idyllic region, we find Briermere, a family farm and orchard we just can't get enough of. This idyllic farm spans across acres of fertile land, where a diverse array of fruits, flowers and vegetables flourish under the watchful care of the dedicated team. The farm's commitment to sustainable farming practices and organic cultivation has earned it a stellar reputation for producing high-quality, flavorful produce.One of the farm's most notable attractions is its pies, most famously apple and strawberry-rhubarb, made at the farm with the fresh fruit from their bountiful orchards, which boast a variety of apple cultivars, including the esteemed Newton Pippin apples used in our cider. These orchards are meticulously maintained by the farm's owner and farm manager, Clark, who is revered for his expertise and passion for nurturing the land.
This first release of From The Coast is made from fruit from the 2021 harvest. The Newton Pippin apples embody the rich tradition of cider making in the United States; this apple variety has a storied history, dating back to the late 17th century, and its exceptional qualities have long been celebrated by cider enthusiasts and connoisseurs. It is an apple deeply intertwined with the heritage of our nation, a symbol of the artistry and craftsmanship that have defined cider making for generations. And the origin of the cultivar can be traced back to Long Island where it was first identified and bred for cider.
It is through From the Coast that we honor this tradition by allowing the natural beauty of the Newton Pippin apples to shine. We keep our process pure and unadulterated; we simply let the juice ferment wild, nothing added nothing removed. After the vigorous stage of the fermentation in stainless steel, we racked the cider into glass demijohns, where the cider settled and rested for a year+ before racking and bottling in early 2023. No yeast was pitched, no pectic enzyme was added, we just let nature and these apples do their thing. During bottling, we introduce a dash of sugar, which undergoes fermentation, resulting in the snappy effervescence that characterizes our cider—a technique known as bottle conditioning.
For those of you far from our coastline, it is our hope that with each sip you find yourself uplifted, transported to our warm and salty shores. As we bask in the warmth of a beautiful June, we are reminded of the privilege of crafting cider in this remarkable setting. The gentle coastal breeze and the fertile soil imbue our apples with a vitality that is unique to our beautiful home.
